Difference between что and который

Did you know that sometimes we use что instead of который? It is common in poetry, songs and proverbs. Что  can be used with animated nouns, although it is not very common.

For example,

Устал тот ветер, что листал страницы мировой истории.
The wind, that scrolled through the pages of world history. got tired.
