but how to distinguish roast chicken and fried chicken?

Actually in the majority of cases, especially in everyday speech, there is no difference in Russian between fried chicken and roast chicken. We can only tell the difference by context. However, if you want to be more precise, "roast chicken" is курица, запечённая в духовке and "fried chicken" is жареная курица.
